PLANETARIUS PROJECT_VINIUM FIERI IUSSIT (a new concept in winemaking)
Planetarius is a COMPREHENSIVE PROJECT to produce HIGH-QUALITY WINES with significant savings and maximum respect for the grapes and the working environment. The ultimate goal is to produce NATURAL wines without chemicals.
For this reason, the project includes:
A) TERRITORY
Study of the territory and soil, with the help of geologists who perform the relevant analyses.
B) VINE SELECTION
Study of the vines, with the help of agronomists who perform analyses and study the optimal position for planting the seeds.
C) VINE TREATMENTS
Studies on vine treatments, to be carried out with the help of chemists and environmental and land experts, who study the most natural processes that respect the soil and the plants.
D) VINEYARD CONTROL AND CERTIFICATION
Collaboration with certification bodies and universities to certify vineyard activities and monitor the soil, vines, and wildlife.
E) GRAPE HARVEST: HARVESTING AND FIRST SELECTION OF GRAPE
An organized system for harvesting and transporting grapes, refrigerated until processing, with the ultimate goal of obtaining fresh, top-quality grapes.
F) GRAPE SELECTION IN THE CELLAR GROUND LEVEL: GRAPE PROCESSING ROOM (PRIMATIST ROOM)
This is where the actual selection of both red and white grapes takes place, where the primary goal is to treat them with the utmost respect. Here, the grapes are selected and sorted according to quality, washed, dried, reselected, destemmed, and pressed with innovative, specialized, and modern machinery, ensuring only the finest, healthiest, and most perfect grapes.
The “PRIMATIST ROOM” is a processing room designed to allow visitors to observe the entire grape selection process from above. Finally, the grapes pass through a hole in the floor to the lower room, the “FERMENTATION ROOM.”
G) FERMENTATION
BASEMENT FIRST FLOOR: FERMENTATION ROOM
This fermentation room processes the red grapes, pressed with must and skins, which arrive by gravity or gravity directly from the “PRIMATIST ROOM.” Here, the grapes are moved using two special machines: inclined vibrating channels (5-10%) called “VIBROCHANNELS,” equipped with a rotating joint called “ROTO-VIBROCHANNEL” (without pipes or pumps). These fully respect the structure of the grapes, which, rotating 360°, carry the crushed grapes directly into the TOPTANK-FLY fermenters.
These machines are also equipped with an automatic washing system, an inert gas system, etc. The TOP TANK-FLY fermenters, also located in the “FERMENTATION ROOM,” are MULTIFUNCTIONAL fermenters. Among the various operations they perform, they primarily perform NATURAL processes during which the maximum of the grapes’ original natural properties are extracted. H) PRESSING
2ND BASEMENT FLOOR: PRESSING ROOM
This is the room where the spent pomace from fermented grapes or the white grapes are pressed, going directly to the press located in the center of the room.
The white grapes arrive directly with the stems or already destemmed and crushed, via a vertical stainless steel channel from the PRIMATIST ROOM directly into the press.
The spent fermented red grapes arrive directly from the fermenters via VIBROCHANNELS inclined at 5-10% and with a ROTO VIBROCHANNEL rotating joint (without the use of belts or pumps). These also rotate 360°, collecting the spent pomace from the fermenters and transporting it directly to the press, always equipped with automatic WASHING systems and an INERT GAS system.
The press in the center of the room has a unique function: it allows the pressing phases to be adjusted according to needs, selecting the various steps, working under inert gas or cold, with the pomace discharged directly into a screw conveyor below that immediately carries it out and loads it into containers to avoid contamination or pollution. I) HEALTHY ENVIRONMENT WITH SERVICES
The following services are installed in the “PRIMATIST ROOM,” “FERMENTATION ROOM,” “PRESSING ROOM,” “EXCLUSIVE ROOM,” “STORAGE ROOM,” “AGEING ROOM,” and “BOTTLING ROOM”:
ARCHIMEDE is a computer system with specific programs that controls and manages all Planetarius processes;
ECOSYSTEM is a system for maintaining healthy environments, extracting CO2, vapors, and other pollutants from the floor.
